### Zabaione Recipe
#### Ingredients:
- 4 large egg yolks
- 1/2 cup granulated sugar
- 1/2 cup Marsala wine (or another sweet wine)
- Fresh berries or cookies (for serving, optional)
#### Instructions:
1. **Prepare a Double Boiler:**
- Fill a pot with about an inch of water and bring it to a simmer. Place a heatproof bowl on top of the pot, ensuring the bottom of the bowl does not touch the water.
2. **Combine Ingredients:**
- In the heatproof bowl, whisk together the egg yolks and sugar until the mixture is pale and thick.
3. **Add Wine:**
- Gradually whisk in the Marsala wine.
4. **Cook the Mixture:**
- Place the bowl over the simmering water and continue whisking constantly. The mixture will gradually become foamy and start to thicken. This process takes about 10-15 minutes. The zabaione is ready when it has tripled in volume and has a light, airy texture.
5. **Serve:**
- Once thickened, remove the bowl from the heat. You can serve the zabaione warm, or if you prefer it chilled, let it cool to room temperature and then refrigerate it for at least an hour.
- Serve in individual glasses or bowls, topped with fresh berries or accompanied by cookies if desired.
