- 1 cup whole wheat flour
- 1 tablespoon oil or ghee

- 1 cup chana dal
- 1 cup jaggery (grated)

### Instructions:
1. **Prepare the Dough:**
- In a bowl, mix whole wheat flour, a pinch of salt, and oil/ghee.
- Add water gradually and knead into a soft, pliable dough.
- Cover the dough and let it rest for at least 30 minutes.
2. **Prepare the Filling (Puran):**
- Wash and cook the chana dal in a pressure cooker with enough water until soft but not mushy.
- Drain the excess water and mash the dal well.
- In a pan, melt the jaggery with a little water over low heat.
- Add the mashed chana dal to the melted jaggery and cook on low heat, stirring continuously until the mixture thickens.
- Add cardamom powder and nutmeg powder, mix well, and let the filling cool.
3. **Assembling the Puran Poli:**
- Divide the dough and the filling into equal portions.
- Roll out a portion of the dough into a small disc.
- Place a portion of the filling in the center of the dough disc.
- Gather the edges of the dough to enclose the filling and pinch to seal.
- Gently roll out the filled dough ball into a thin, round flatbread, being careful not to let the filling spill out.
4. **Cooking the Puran Poli:**
- Heat a tawa or griddle over medium heat.
- Place the rolled out Puran Poli on the tawa.
- Cook until golden brown spots appear on both sides, applying ghee as needed.
- Repeat with the remaining dough and filling portions.
