Motichoor laddu is a traditional Indian sweet made from tiny gram flour (besan) balls that are fried and then soaked in sugar syrup. These balls are called "boondi," and when they are very small, they are referred to as "motichoor." Here’s a basic recipe for making motichoor laddu:
### Ingredients
- 1 cup gram flour (besan)
- 1 cup sugar
- 1/2 cup water
- 1/4 teaspoon baking soda
- 1/4 teaspoon cardamom powder
- 2 tablespoons ghee (clarified butter)
- Orange food color (optional)
- A few saffron strands (optional)
- 2 tablespoons chopped nuts (almonds, pistachios)
- Oil or ghee for frying
### Instructions
1. **Prepare the Batter:**
- In a bowl, mix the gram flour with water to make a smooth batter. The batter should be of flowing consistency.
- Add a pinch of orange food color if you want the traditional orange hue.
2. **Fry the Boondi:**
- Heat oil or ghee in a deep frying pan.
- Hold a perforated spoon (boondi jhara) over the hot oil and pour a ladleful of batter onto it.
- Tap the handle of the perforated spoon gently so that tiny droplets of batter fall into the oil.
- Fry the boondi until golden and crispy, then remove and drain on paper towels.
3. **Make the Sugar Syrup:**
- In another pan, mix sugar and water and heat until the sugar dissolves completely.
- Add saffron strands and cardamom powder.
- Boil until the syrup reaches a one-string consistency (when a drop of syrup between your fingers forms a single string when pulled apart).
4. **Combine Boondi and Syrup:**
- Add the fried boondi to the hot sugar syrup and mix well so that all the boondi gets coated with the syrup.
- Let the mixture cool down a bit but not completely, as it should be warm for shaping.
5. **Shape the Laddus:**
- Apply a little ghee to your palms and take small portions of the boondi mixture.
- Shape them into round laddus by pressing gently with your hands.
- Garnish with chopped nuts.
6. **Serving and Storing:**
- Allow the motichoor laddus to cool completely before serving.
- Store them in an airtight container.
