### Ingredients


- 1/2 cup rice (basmati rice works well)

- 4 cups milk (full-fat milk is preferred)

- 1 cup jaggery (grated or powdered)

- 2 tablespoons ghee (clarified butter)

- 1/4 teaspoon cardamom powder

- 10-12 cashew nuts

- 10-12 almonds (sliced)

- 10-12 raisins

- A pinch of saffron strands (optional)

- 2 tablespoons water


### Instructions


1. **Preparation:**

    - Wash the rice thoroughly and soak it in water for about 30 minutes. Drain and set aside.

    - If using saffron, soak the strands in 2 tablespoons of warm milk.


2. **Cooking the Rice:**

    - In a heavy-bottomed pan, heat 1 tablespoon of ghee over medium heat.

    - Add the drained rice and sauté for 2-3 minutes until it becomes aromatic.

    - Pour in the milk and bring it to a boil. Reduce the heat and let it simmer, stirring occasionally, until the rice is fully cooked and the milk thickens. This should take about 20-25 minutes.


3. **Adding Jaggery:**

    - In a separate small pan, add the jaggery and 2 tablespoons of water. Heat it on low flame until the jaggery melts completely. Do not boil it.

    - Once the jaggery melts, turn off the heat and let it cool slightly.


4. **Combining Ingredients:**

    - Add the melted jaggery to the cooked rice and milk mixture. Stir well to combine.

    - Cook the kheer for another 5-10 minutes on low heat, stirring continuously. Ensure the jaggery is well incorporated.


5. **Finishing Touches:**

    - In a small pan, heat the remaining 1 tablespoon of ghee.

    - Fry the cashew nuts, almonds, and raisins until they are golden brown.

    - Add the fried nuts and raisins to the kheer.

    - Add the cardamom powder and the soaked saffron (if using) and mix well.
