### Honey Cake
#### Ingredients:
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 1 cup vegetable oil
- 1 cup honey
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup warm coffee or strong tea
- 1/2 cup fresh orange juice
- 1/4 cup whiskey (optional)
- Zest of 1 orange
#### Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, cloves, and allspice.
3. In another large bowl, whisk together the oil, honey, granulated sugar, and brown sugar until well combined.
4. Add the eggs to the wet mixture one at a time, beating well after each addition. Stir in the vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, alternating with the warm coffee (or tea), orange juice, and whiskey (if using). Mix until just combined. Fold in the orange zest.
6. Pour the batter into the prepared pan(s).
7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If using two pans, start checking for doneness at around 35 minutes.
