Flavor Full Phirni

 

Phirni is a traditional Indian dessert made from ground rice, milk, and sugar, flavored with cardamom and garnished with nuts and saffron. Here's a step-by-step recipe to make phirni:


### Ingredients:

- 1/4 cup basmati rice

- 1 liter (4 cups) full-fat milk

- 1/2 cup sugar (adjust to taste)

- 1/2 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 2 tablespoons chopped almonds and pistachios (for garnish)

- Rose water or kewra water (optional)


### Instructions:


1. **Prep the Rice:**

   - Rinse the basmati rice thoroughly under running water.

   - Soak the rice in enough water for about 30 minutes.

   - Drain the water and spread the rice on a clean kitchen towel to air dry for a few minutes.

   - Grind the dried rice into a coarse powder using a blender or a mortar and pestle. The texture should be gritty, not fine.


2. **Boil the Milk:**

   - In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent it from burning at the bottom.


3. **Cook the Rice:**

   - Once the milk comes to a boil, reduce the heat to low and slowly add the ground rice, stirring continuously to avoid lumps.

   - Cook the rice in the milk, stirring frequently to prevent sticking, until the mixture thickens. This will take about 20-25 minutes.


4. **Add Sugar and Flavorings:**

   - Once the rice is cooked and the mixture has thickened to a pudding-like consistency, add the sugar and stir well until it dissolves.

   - Add the cardamom powder and saffron strands (if using), and mix well.


5. **Simmer:**

   - Let the phirni simmer on low heat for another 5-10 minutes, stirring occasionally. The mixture will thicken further as it cools.


6. **Cool and Garnish:**

   - Remove the phirni from heat and let it cool to room temperature.

   - Pour the phirni into serving bowls or traditional earthenware pots (matkas).

   - Garnish with chopped almonds and pistachios.

   - You can add a few drops of rose water or kewra water for extra fragrance.


7. **Chill:**

   - Refrigerate the phirni for at least 2 hours before serving. It is best served chilled.
